In my nutritional therapy practice, I utilize the paleo diet as a tool for healing clients. For example, I have a practice client who is trying to change her gut microbiome because she has an overgrowth of bad bacteria that’s causing her extreme bloat, discomfort and immunity issues. In order to starve this bacteria, grains, sugar and legumes are removed from the diet for a certain period of time. This allows the gut environment to return to normal. Our bodies are smart and they will heal themselves when you feed them correctly! It’s amazing.
Transitioning from a standard American diet to a paleo diet can seem extremely restrictive at first. Thankfully, there are so many paleo recipe developers who have made the healing process so much less restrictive! When I’m eating paleo, I no longer feel like I’m missing out because I’ve made so many amazing recipes that are honestly even better than the foods I was eating before.

Ingredients:
- 2 cups almond meal , or almond flour
- 1/4 cup coconut oil , softened (non-vegans can use grass fed butter)
- 3 Tablespoons pure maple syrup
- 1/4 teaspoon sea salt
- 1/2 teaspoon baking soda
- 2 teaspoons vanilla extract
- 1/2 cup dark chocolate chips
Instructions
- Preheat oven to 350F.
- In a medium bowl, whisk together the almond meal, salt, and baking soda, then add the coconut oil, maple syrup and vanilla extract and mix well.
- Fold in the chocolate chips, then drop batter by rounded tablespoons onto a baking sheet lined with parchment paper.
- Bake at 350F for 8-9 minutes, until the edges are golden brown.
- Allow to cool on the pan for 10 minutes, then serve warm or allow to cool to room temperature
